Honey harvested in small batches from the Noochii Hive apiary in Chelmsford, Essex.

Noochii honey is processed by hand and it’s a slow process but we don’t mind! The capped comb is cut from the frames and crushed with a wooden spoon, then strained through a couple of different sized sieves over night before bottling.

The end result is lovely raw honey! Some tiny bits of pollen, wax and probably propolis do get through and enhance the natural flavour. Every frame is slightly different in colour and taste depending on which flowers were in bloom when the nectar was collected by the bees.

As the bees can cover a 3 mile radius from the hive they will bring in many different types of nectar and pollen, and means it’s almost impossible for us to say with any certainty what flowers the honey is from. This is something of a beautiful mystery - you never quite know what the honey will taste like!
